Mint Hot Cocoa

I don't know about where you live but here we just got slammed with that crazy blizzard of 2011 also called snowmaggedon, snownami, snowpocolypse etc. So far I have survived on lots of craft time, snuggle time with my dog and plenty of delicious cooking. In my last post I did promise you a Mint Hot Cocoa recipe so here it is, I created this one myself.

Mint Hot Cocoa

This makes one serving so double, triple, quadruple it if need be.
In a small pot over medium heat combine the following ingredients and whisk constantly until well combined and heated to your desired temp. If you are anything like my mother who has no taste buds left you will need to crank the heat on up to high and bring it to a good boil first, I however do not recommend that. 1 cup almond milk, 1 Tablespoon cocoa powder (I use dutch but regular is delicious too), 2 Tablespoons dark agave nectar, 1/2 tsp mint extract (I used frontier brand because I like the wholesome healthy ingredients). That's it folks enjoy! Hope this recipe makes you as happy as it makes me!

Today I read Psalms 23 such a great reminder of where my peace, strength and comfort come from. I didn't do a workout today but I did make a new decorative pillow to accent a family heirloom rocking chair I recently re-upholstered.
